Насколько мне известно, дрожжи вполне себе обитатели человеческого тела. Если дрожжей не много и если девочка не болеет, то это совсем не значит, что у неё их нет.
Между прочим, похоже, что частенько личная микробиота пекарщицы проникает в закваску (и наоборот), даже если та ничего такого не планировала.

Хотя не ясно, насколько эти дрожжи свои. Могла быть и колония даже обычных пекарских. Или что-то с мукой попавшее.

У сахаромицетов много разных штаммов. Элевые и лагерные дрожжи, например, долго считались разными видами. Так что не факт, что именно обычные из Пятёрочки или там LIDL. Может, свою закваску-спонтанку вимена делали; дальше введения не читал.
